Summer Harvest 2026 – Raw Brighton Honey (275g)

After our spring honey was removed from the hives in June, the bees returned to the changing landscape and began creating an entirely separate seasonal crop. This Summer Harvest was collected from our Brighton apiary in July 2026.

By early summer, the forage surrounding Brighton and the edge of the South Downs has changed. Likely sources include bramble and blackberry blossom, white clover, fragrant lime blossom and sweet chestnut, alongside summer garden flowers and chalk-downland blooms such as wild thyme and knapweed.

As with all genuine multifloral honey, the exact recipe belongs to the bees. The flowers, weather and timing combine differently with every harvest, giving the summer crop a noticeably different character from our spring honey.

This batch is fuller and more aromatic, with a richer sweetness and a warm, slightly peppery finish.

Raw, unpasteurised and never fine-filtered, it is gently strained before every jar is filled and numbered by hand in Brighton.

Delicious on toast or yoghurt, paired with mature cheese, or used to add depth to dressings, marinades and baking.
